On 14th of February an old Bulgarian tradition is celebrated Tryphon Zarezan (Saint Tryphon), the feast of the wine, wine-growers, tavern-keepers and gardeners. Traditionally on Tryphon Zarezan the vines are pruned symbolically, so to get a rich harvest in the autumn. This custom is associated with the spring pruning, the first business process in the annual cycle of processing of the vine. After St. Triphon's day comes spring and the beginning of the new vine-growing season. In Bulgarian villages, Tryphon Zarezan is celebrated for three days, with cheerful and noisy companies.
